Hello , I would like to clarify that in puerto rican cooking the bay leaves are not used in rice with.. we use other herbs for the purpose. Like parley,thyme,sage.. the bay leaves are mainly used for escabeche , stews. This dish is mostly done using green pigeon peas on the rice,red pepper ,olives and capers. And we use deboned pork chops that are seasoned(marinated) and seared before the water (most usual chicken stock) ,sofrito is used.. basically the same procedure used if cooked with chicken , ham etc.. best wishes , glad you are opening to other country recipes , glad if I can assist ..
